The maitake mushroom (Latin: Grifola frondosa) is a highly prized edible mushroom in East Asia. It has been consumed in Japan and China for at least 5000 years. However, maitake is more than just a popular edible. In East Asia, it has long been recognised as having positive effects on health and well-being. Maitake powder is therefore an important component of traditional Japanese and Chinese medicine.

Translated from Japanese, maitake means "dancing mushroom". Some mushroom experts interpret this to mean that the name originated because collectors went wild with joy and started dancing wildly when they found large quantities of this mushroom delicacy. Or could it be that the desire to dance was awakened not before, but only after consumption?

Whatever the case, it is likely that this name is evidence of the popularity of this flavoursome, aromatic mushroom. In contrast, the German name Klapperschwamm (rattling sponge) seems rather sober.

The fruit bodies of the maitake can reach a considerable size and can weigh up to 20kg. Nevertheless, the fruiting bodies have an inconspicuous appearance, so they are rarely found. It is now possible to cultivate this mushroom, so there is no longer any need to search for it. Thanks to this progress, we can offer you maitake as a powder and extract in many of our products.

Composition:

Maitake mainly contains polysaccharides, including some specific ones such as grifolan and grifolin, as well as metal-bound proteins and lectins. Maitake is also rich in nucleotides. These are chemical compounds that are particularly important for the structure of nucleic acids. Nucleic acids are components of cell nuclei. Maitake fat contains various unsaturated fatty acids. Ergosterol, which explains the high vitamin D content of maitake, is interesting. Mushroom experts have isolated a standardised, purified protein-bound polysaccharide from maitake: it is called the D fraction.

We produce dried, ground maitake from the fruiting bodies of the mushroom. The mushroom fruiting bodies come from certified organic cultivation (DE-ÖKO-003). In addition, experts check the quality of the powder in our laboratories. One pack contains 75 g of powder. The powder is also available in 1000g packs on request.
